Rice Ploff

PLOFF
Ingredients
● ¼ cup olive oil
● 5 large carrots, grated
● 9 medium size cloves of garlic, minced (2 tablespoons)
● 3 cups Jasmine or Basmati rice
● 4.5 cups water
● 1 tablespoon sea salt
● 1 teaspoon black pepper

Preparation
● Preheat oil; reduce to medium heat.
● Add minced garlic and carrots; sauté for 5 minutes.
● Add rice and water. Cover. Bring to boil.
● Reduce heat to medium heat and boil for 5 minutes.
● Reduce heat to medium-low and boil, stirring occasionally, until water is nearly absorbed.
● Reduce heat to low and let cook for 10 minutes or until rice is cooked through.
● Serve hot.
● It is great served with TOMATO salad.
