Cheesecake

Cheesecake? You mean you can be a vegan and have cheesecake? Yes!!! After some research I actually came up with a recipe for a cheesecake (by combining different ingredients from different recipes and then adding my own), and it tastes delicious. Don't believe me? Well, then you will just have to make it and see for yourself.

Here is the recipe.

Vegan Cheesecake
Filling
  • 2 containers plain Toffuti vegan cream cheese
  • 2/3 cup sugar (unbleached, cane sugar)
  • 3 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon salt
  • 1/4 cup soft (silken) tofu

Crust

  • 10-11 Graham honey crackers
  • 3 tablespoons maple syrup
  • 3-4 tablespoons olive oil
  1. Preheat oven to 350 F.
  2. Mix cream cheese in a blender or food mixer with sugar, lemon juice, salt and silken tofu.
  3. Blend until it is thoroughly processed and appears to be smooth (no lumps).
  4. For crust: place crackers in a dry blender; blend until ground with no chunks.
  5. Pour crumbs into a mixing bowl and add syrup and olive oil.
  6. Pour out mixture into a pie tin and press down with a spoon (or anything you choose) to form crust.
  7. Once crust is made, pour out cream cheese mixture into it, distributing evenly.
  8. Bake in the oven for about 35-40 minutes (until top is lightly golden).
  9. Cool to room temperature and refrigerate.
  10. Serve with a choice of your favorite berries.
