Chalupas

Shells
2.5 cups unbleached flour
1 teaspoon baking powder
1 teaspoon salt
1 tablespoon olive oil
1/2 cup warm water
1/2 cup soy milk
Oil for deep frying

Filling
1 bag Morning Star Meal Starter
1 tablespoon chili powder
1 teaspoon paprika
1 teaspoon salt
1/2 cup chopped onions
4 oz. tomatoe sauce
Toffuti sour cream (Better Than Sour Cream)
Chopped romaine lettuce
Diced tomatoes

To make Chalupa shells: combine flour, baking poweder, salt, oil, water and milk. For healthier taste mix 1.5 cup white flour with 1 cup of wheat flour. If you do so, add 1/3 teaspoon of baking poweder. Make dough out of the ingredients; shape into a cylinder and divide equally into 6 parts. Roll each part into a circle with a roller. Make sure not to make any holes in it.

Heat up oil and reduce to Medium High. Fry each disc until puffed and golden on both sides (turn once). Drain on absorbent paper towels.

To make Filling: combine veggie crumbles with chili poweder, salt, paprika, add onions and tomatoe sauce. Fry in a skillet until everything is mixed together and hot. Stir often.

To make a chalupa, take a shell, pile with filling, sour cream, chopped veggies and roll it up.
